Preserving peaches - explained step by step

Unfortunately, once they have been harvested, they will not last very long. Especially when they have bruises, they quickly turn brown and start to rot. So it's good to know how to preserve the fruit. One possibility would be e.g. canning. To do this, the peaches must be flawless when you buy them, i.e. they have no pressure points. Then the peaches can be marinated and kept for a long time.

Of course, you can also conjure up other delicacies from the fruits. For example, peach sorbet or peach smoothies. However, you must then consume them straight away. On the other hand, you have canned some of the delicious fruit for longer.

How to insert peaches correctly

Ingredients:

  • 8 fresh peaches
  • 2 to 3 liters of water
  • 400 g of sugar
  • 2 packets of vanilla sugar
  • a bit of salt
  • cloves
  • Mason jars with closure

Preparation:

1First of all you have to wash and peel the fruit carefully. You can make this easier for yourself by scratching the bowl crosswise and then pouring hot water over the peaches. If you then cold-chill them, the shell can be easily removed. Then cut in half and remove the stones.

2 To be able to preserve the peaches, you need an appropriate liquid. To do this, bring the water to a boil and then add the pinch of salt, sugar and vanilla sugar. Then remove the pot from the hob and wait until the sugar has completely dissolved in the water.

3Now distribute the peach halves evenly over the preserving jars and add a clove each. Then fill in the hot liquid so that the fruits are completely covered with it. Now wipe the edge of the mason jars with a clean cloth and close them tightly immediately.

4After you have now placed the peaches in the brew, you still have to boil them. You can do this in the pot or in the oven. Simply place the filled glasses in the pot and add water. The water should be high enough to seal with the liquid in the mason jars. Then you have to cook the peaches at a temperature of 75 degrees for about 30 minutes.

You can also cook the peaches in the oven. Fill a baking sheet about 2 cm high with water and then put the glasses on it. Make sure that they do not touch each other. Then slide the tray into the bottom bar of the oven and heat the oven to 175 ° C. Then keep an eye on the glasses. As soon as air bubbles rise in it, you have to switch off the oven. The jars must then remain in the closed oven for 30 minutes.

5Now take the glasses out of the oven, turn them upside down and let them stand for at least two hours. Once the fruits have cooled, you only need to store them in a cool, dark place. This way, they can be stored and enjoyed for several months.
