This option is perhaps the simplest, but it is no less tasty than all the others. Lecho without vinegar for the winter can be prepared using one of the recipes below.

A few words about lecho

A delicious appetizer lecho is a European dish, which is considered to be the homeland of Hungary. Nevertheless, today he is loved all over Europe, and in Asia and even in the Middle East. Traditionally, lecho is considered a separate dish and is used in Germany and Hungary as a side dish. Lecho is ideal with any meat, fish, white bread, omelettes and smoked meats. Its delicate taste will refresh even boiled vegetables.

The classic lecho recipe contains only these ingredients:

  • bell pepper;
  • fleshy tomatoes;
  • salt and sometimes a little sugar.

It is prepared without oil and vinegar, and without herbs and spices. They eat it right away, but it is customary for us to roll it up in jars for the winter. We advise you not to use vinegar, as it is quite harmful to the body. Vinegar blanks are not suitable for children.

Recipe number 1 Lecho with spices

This recipe for lecho without vinegar and oil will appeal to even real gourmets. Initially, you need to prepare the ingredients:

  • Fleshy tomatoes - 4 kg;
  • Salad sweet pepper - 1.5 kg;
  • Medium onions - 0.2 kg;
  • Head of garlic;
  • Allspice - 5 peas;
  • Lavrushka - 7 leaves;
  • Ground red pepper - 0.5 tsp;
  • Sugar - 3 tbsp. heaped spoons;
  • Salt - 1.5 tbsp spoons.

Cooking lecho according to this recipe takes 50-60 minutes without cooking time. Tomato juice is prepared first. Tomatoes are washed well, cut out the stalk and chopped in any convenient way. It is best to first get rid of the skin on the fruit. Now this gruel is poured into a saucepan and put on fire.

Meanwhile, onion and pepper are washed and cut: onion into half rings, pepper into cubes. Tomato gruel is boiled over low heat after boiling for about 20 minutes. Only now can you put onions into it and mix. After five minutes, add diced pepper and all the spices. Garlic is added last, 5 minutes before the dish is ready. In total, vegetables should be cooked for 20-25 minutes. All! Under lecho, you can turn off the heat and pour it into sterilized jars.

If you really want, add quite a bit of vegetable oil along with garlic, literally 2 tablespoons. It should be odorless.

Recipe number 2 Lecho tender

We advise you to cook lecho without vinegar at least once according to this recipe, since it turns out to be incredibly tender. It also does not contain vegetable oil.

To prepare this delicious snack you will need:

  • Fleshy tomatoes - 3 kg;
  • Sweet peppers with a thick wall - 2 kg;
  • Sand sugar - 1 glass;
  • Salt - 2 tbsp. spoons without a slide;
  • Head of fresh garlic;
  • Ground black pepper - on the tip of a dessert spoon.

Black pepper in this case acts as a spice, it sets off the taste of the snack. Its average amount is 1 dessert spoon.

Since it is not difficult to prepare lecho according to this recipe, no more than an hour should be allocated for the cooking process. Initially, we prepare tomato puree. It should be thick and fragrant. It is poured into a saucepan and put on fire. The boiled puree should be simmered over low heat for at least 15 minutes. In the meantime, the hostess will have time to prepare the pepper. You can cut it in different ways, as you like. As soon as the mashed potatoes have boiled, add pepper, sugar and salt to it, mix everything and cook for half an hour. About 10 minutes before the end of cooking, pepper and garlic are introduced into the puree. All mix and taste. The taste of such an appetizer will reveal itself only after a while. It can be served hot or can be poured into jars.

Recipe number 3 Fragrant lecho for the winter

Lecho without oil for the winter is delicious, and if the composition also includes fragrant spices, then the appetizer will work out - you will lick your fingers. This is one of those recipes.

For cooking you will need:

  • Fleshy tomatoes - 3 kg;
  • Sweet pepper - 1 kg;
  • Sugar - 3 tbsp. heaped spoons;
  • Salt - 1 tbsp. the spoon;
  • Garlic - 1 head;
  • Parsley - 1 large bunch;
  • Cilantro - 1 bunch;
  • Ground black pepper - 1/3 tsp;
  • Lavrushki - 4 leaves;
  • Allspice - 5 peas;
  • Carnations - 4 inflorescences.

This is one of those recipes that can sink into the soul. Lecho can be eaten with spoons, especially with meat dishes. The standard preparation starts by chopping good quality fleshy tomatoes. The stalks must be removed, the tomatoes are cut into cubes with or without the skin. Now put the tomatoes in a saucepan and bring to a boil.

At this time, you can prepare the pepper, peel the garlic. Tomatoes, when exposed to heat, will give juice, after which pepper is added, everything is mixed. Cook over low heat for 30 minutes. Now add finely chopped greens. She will boil down a little. Spices, salt and sugar are added immediately after it, cook on low heat for another 20 minutes, stirring constantly. Garlic is added last, before turning off the heat. It should boil for just a couple of minutes.

Banks are sterilized in advance, the snack is poured into them while still hot and rolled up. Almost all of the recipes above are oil and vinegar free. It should be borne in mind that there are peculiarities of storing such a snack. Let's talk about this in more detail.

Storing lecho without vinegar in jars

Vinegar is a synthetic product and is used as an excellent preservative in canning. For this, vegetable oil is also used in large quantities. Lecho recipes often contain large amounts of oil.

What if you like the recipe, but there is no oil or acetic acid in it? In order for such a snack to still be stored all winter, several prerequisites must be met:

  • jars and lids must be thoroughly washed with a special tool; it is also good to use baking soda for pre-treatment;
  • it is imperative to sterilize both jars and lids, this will kill all remaining microbes;
  • having rolled lecho into jars, you need to store it only in a cold place, for example, in a cold cellar or refrigerator. The optimum temperature is +5 degrees.

As a rule, such snacks are not closed in large quantities, and banks are open only on major holidays. Remember to wash vegetables thoroughly, especially greens. It is washed in a colander in several waters. The more sterile the dishes and ingredients are, the more likely it will not ferment, and you will enjoy its excellent taste in winter.
